Barbecued Shoulder Chops

Ingredients
- 2 New Zealand Lamb shoulder chops
- 15ml/1 tsp. tomato puree
- 1 small onion, coarsely grated
- 15ml/1 tbsp. Worcestershire sauce
- 2.5ml/½ tsp. ground ginger
- 30ml/2 tbsp. malt vinegar
- 10ml/2 tsp. demerara sugar
- 1 clove garlic, crushed
- 5ml/1 tsp. whole grain mustard
- 2 kiwi fruit
Method
1. Mix the tomato puree with the onion, Worcestershire sauce, ginger, vinegar, demerara sugar, garlic and mustard.
2. Peel one of the kiwi fruit, mash it and add to the mixture. Add the shoulder chops, coat them with the marinade, then cover and leave in a cool place for 1 hour.
3. Grill, when required, for 10-15 minutes each side, basting with the remaining marinade.
4. Serve with peppers, couscous and a mixed salad and garnish the chops with the other kiwi fruit, peeled and sliced.
Tips and hints
- This recipe is just as nice made with New Zealand Lamb chump chops or loin chops.
- Halve the quantity of marinade if the meal is required for 1 person only.
