Orange Glazed Lamb Steaks

Ingredients

  • 4 New Zealand Lamb leg bone steaks
  • 60ml/4 tbsp. thick- cut orange marmalade
  • 15ml/1 tbsp. whisky
  • 15ml/1 tbsp. red wine vinegar
  • 15ml/1 tbsp. freshly chopped coriander

Method

1. Trim the steaks and snip the edges at 2.5cm/1in intervals to prevent the meat curling as it cooks.
2. Mix the marmalade with the whisky, red wine vinegar and coriander.
3. Place the steaks on the grill pan, brush with a little of the glaze and cook under a preheated grill for about 10 minutes until brown.
4. Turn over the steaks, spread with more glaze and cook for a further 10 minutes until tender and slightly caramelised.
5. Top with any remaining glaze and serve garnished with orange slices and fresh coriander.

Tips and hints

  • Replace the whisky with orange juice, if preferred.
  • Other fresh herbs, such as mint or oregano, can be used in place of the coriander.
