Chill-Out Chow Mein

Ingredients

  • 4 New Zealand Lamb neck fillets, thawed if frozen
  • 1 tbsp. oil
  • 450g pack vegetables for stir-frying
  • 180g jar ready-made black bean or hot and spicy Cantonese style sauce
  • 250g ready-cooked egg noodles
  • soy sauce (optional)

Method

1. Cut the neck fillets into strips.. Heat the oil in a wok or large frying pan and stir in the lamb. Cook over a high heat for 5 minutes until the lamb is almost cooked through.
2. Stir in the vegetables and heat through for 2 minutes. Tip in the jar of sauce and stir well until everything is hot and completely coated with the sauce.
3. Add the noodles, separating them with your fingers as you put them in the pan. Cook for 2/3 minutes, mixing them through with the meat, sauce and vegetables. Serve straight away drizzled with a little extra soy sauce.
Neck fillets are great for this recipe because they contain a lot of flavour.
There are many different flavoured sauces for stir frying available in the supermarket which are great for making stir fried noodle dishes. If they seem a little thick, just add a splash of water.
You could also try this recipe with Express RiceŽ instead of noodles, as an alternative.
